Ingredients

  • 1 Tablespoon butter
  • 1 1/2 lbs ground Simple Truth bison
  • 1/2 sweet white onion diced
  • 1 bell pepper (any color) diced
  • 5 garlic cloves diced
  • 1 jalapeno diced (seeds removed)
  • 1 cup ketchup
  • 1 cup water
  • 2 (heaping) Tablespoons brown sugar
  • 1 teaspoon Worcestershire Sauce
  • 2 Tablespoons tomato paste
  • salt and pepper to taste
  • rolls large or mini

Method

  1. Chop all veggies (onion, bell pepper, garlic, jalapeño pepper) to same sized dice and set aside.
  2. Add butter to dutch oven and melt over medium high heat.
  3. Add ground Simple Truth bison, using a wooden spoon, cook until brown.
  4. Pour ground bison through strainer to drain fat, discard fat, pour ground bison back into dutch oven.
  5. Add onion, bell pepper, garlic and jalapeño to ground bison. Cook over medium high heat for a few minutes, until veggies are softened and garlic is fragrant.
  6. Add ketchup, brown sugar, and water. Stir and let simmer for about 15-18 minutes.
  7. Add tomato paste, Worcestershire, salt and pepper and stir to combine.
  8. While sloppy joe mix is finishing up, butter your buns and toss under broiler for 45-70 seconds. Be sure to watch them so they don't burn!
  9. Spoon finished bison sloppy joe mix on to the toasted buns and serve with chips and mac and cheese. Extra points if you serve on paper plates!
