  • 6 hard boiled eggs chopped
  • 1/4 cup mayo
  • 1 teaspoon ground mustard
  • 1 teaspoon paprika
  • salt and pepper to taste

Method

  1. Prepare your hardboiled eggs. Place eggs in cold water in a pot with a Tablespoon of vinegar. Bring to boil then cover and turn off heat. Cook for 11 minutes then drain and place in a bowl of ice water to finish cooking.
  2. Once eggs are cooled, peel them and chop. Toss chopped eggs into a mixing bowl.
  3. Add mayo, ground mustard, paprika, salt and pepper to chopped eggs and mix until well combined. Mix genthly so your chopped eggs stay together.
  4. Serve cold on it's own or on bread as a sandwich!

Notes

The paprika flavor is strong so you can use just 1/2 teaspoon or remove it all and sprinkle on top instead.
