The most wonderfully tasty burger with a homemade jalapeño bun, roasted pineapple and caramelized onions. This burger is perfect for grilling season, spicy and sweet and delicious!

Throughout the post, we’ll be sharing links to other burgers but we will also have a separate roundup post to all of the Burger Month burgers. Our fun burger recipe, a jalapeño pineapple burger aka a jalapeño bun topped with roasted harissa pineapple is below, complete with the recipe!
We wanted to get a little creative with the buns and opted to add some fresh jalapeño right into the dough! We removed the seeds so they weren’t super spicy but still had that fresh pepper taste we all know and love. I mean they aren’t as decadent as these APPLE FRITTER BUNS from Wildflour’s Cottage Kitchen, but they are still pretty delish.
These homemade buns make this jalapeño pineapple burger pretty fabulous but if you are stretched for time, you can always use these King’s Hawaiian version. I’m pretty sure Kroger Private Selection also has their own version, but nothing beats homemade.
We used sesame seeds to top the buns, but you could also use poppyseed or leave them naked. No matter what, they will be a marvelous addition to your juicy jalapeño pineapple burger. You could also totally use these buns with another Burger Month recipe! Everyday Southwest whipped up a MexiCali Gourmet Burger and it looks phenomenal.
Now that we’ve settled the “spicy” part of the burger, let’s chat about the “sweet” side of it. Do you guys know how to tell if a pineapple is ripe? The power of scent is your friend here. Just flip it over and smell the non-pokey part; it should smell sweet like pineapple juice. If it doesn’t smell like anything then it’s probably not ripe yet and if it’s a little too fragrant, it might be a little rotten.
After you chop up your pineapple, you’ll be ready to season it and toss in the oven. Whisk some melted butter with your spices including harissa seasoning for a little heat. We used the Whole Foods Market harissa which you can now easily buy online at Amazon. Thank you, internet.
We cut our pineapple into half ring kind of pieces but you could chop it into smaller pieces or even leave it as a full ring. Just make sure that they are thin enough to get fully seasoned and roasted. If you have leftover pineapple and don’t want to roast it, you could whip up a quick pineapple salsa or make a pineapple margarita to enjoy with your burger!
After we coated our pineapple in the bowl, we also poured the remaining spice-butter mixture on top of the slices. You can never have too much delicious flavor for your jalapeño pineapple burger!
Since we are on the topic of fruit, here is another recipe from Burger Month! Sweet ReciPeas (cutest name ever) whipped up this delicious Tortilla Chip Taco Salad Veggie Burger and is a great option for those non-meat eaters out there.
Speaking of flavor, we couldn’t not make caramelized onions for this burger. There are several components to this jalapeño pineapple burger but trust me, each one has a specific flavor element that you don’t want to miss. You could even toss on a plain or Chipotle mayo for a little extra deliciousness!

- Healthy Turkey Burgers. These are topped with a creamy jalapeño slaw and spicy mayo, full of falvor and healthy!
- Blazin’ Queso Burger. Okay, this one isn’t healthy. It has white queso AND Doritos on it. It’s incredible.
- Cranberry Jam Burgers. This jalapeño cranberry jam is PERFECT on top of grilled burgers with white cheddar.
Jalapeno Pineapple Burger
Ingredients
Jalapeno Buns
- 3 tablespoons warm milk
- 2 teaspoons active dry yeast
- 2 ½ tablespoons sugar
- 2 large eggs
- 3 cups bread flour
- ⅓ cup all-purpose flour plus more for dusting
- 1 ½ teaspoons salt
- 2 ½ tablespoons unsalted butter softened
- 4 jalapeños chopped with seeds removed
Roasted Pineapple
- 1 whole pineapple sliced
- 1/4 cup melted butter
- 1/4 cup brown sugar
- 1 Tablespoon harissa seasoning
Caramelized Onions
- 3 medium sweet onions sliced
- 2 Tablespoons butter
- 2 Tablespoons canola oil
Burgers
- 1 1/2 lbs of ground beef
- 2-4 pieces of Havarti cheese
- 4 pieces of green leaf lettuce
- favorite burger seasoning
- mayo if desired
Instructions
Jalapeno Buns
- In a glass measuring cup, combine 1 cup warm water, the milk, yeast and sugar. Let stand until foamy, about 5 minutes. Meanwhile, beat 1 egg.
- In a large bowl, whisk flours with salt. Add butter and rub into flour between your fingers, making crumbs. Using a dough scraper, stir in yeast mixture and beaten egg until a dough forms.Add chopped jalapeños to dough and gently mix to combine. Scrape dough onto clean, unfloured counter and knead, scooping dough up, slapping it on counter and turning it, until smooth and elastic, 8 to 10 minutes.
- Shape dough into a ball and return it to bowl. Cover bowl with plastic wrap and let rise in a warm place until doubled in bulk, 1 to 2 hours.
- Line a baking sheet with parchment paper. Using dough scraper, divide dough into 8 equal parts. Gently roll each into a ball and arrange 2 to 3 inches apart on baking sheet. Cover loosely with a clean kitchen towel and let buns rise in a warm place for 1 to 2 hours.
- Set a large shallow pan of water on oven floor. Preheat oven to 400 degrees with rack in center. Beat remaining egg with 1 tablespoon water and brush some on top of buns. Bake, turning sheet halfway through baking, until tops are golden brown, about 15 minutes. Transfer to a rack to cool completely.
Roasted Pineapple
- Preheat oven to 425 degrees F.
- Mix butter, brown sugar and harissa in medium bowl.
- Add sliced pineapple to bowl and mix until fully combined.
- Add pineapple to a sil-pat or parchment paper lined sheet pan an drizzle remaining butter-harissa mixture over pineapple.
- Roast in oven for 25-30 minutes until browned, flipping about halfway through.
- Remove from oven and set aside.
Caramelized Onions
- Add butter and oil to pan and melt slightly.
- Add onions and cook down, stirring every few minutes over medium heat for about 30-45 minutes until desired doneness.
- Remove from pan and set aside.
Burgers
- Grill or cook burgers using desired method, inside in cast iron or on the grill outside. Cook until internal temperature reaches 145 degrees F or desired doneness.
- Add cheese to burger while still in pan/on grill until it melts.
- Add mayo to jalapeño buns and then layer lettuce, burger, onions, pineapple and top bun.
- Serve with your favorite beer and burger loving pal!
