Funfetti cupcakes are the best for a celebration..or a Monday. This funfetti recipe is EXTRA easy because we use a boxed cake mix. Shhh. We also use a few items from Rodelle Kitchen to spruce ’em up.
I love funfetti, it’s such a colorful little cupcake and also pretty delicious. But, because my husband loves Jersey Shore, I just always think of The Situation who has an affinity for funfetti cake. Which also makes me happy, so good thoughts around funfetti all around.
But, these cupcakes are extra awesome because they are cheater (semi-homemade) desserts! I used a box cake mix *gasp* as the base and added some little extras to the batter to make them extra delicious.
Special ingredients for cheater funfetti cupcakes.
Okay, so let me share my secret for making these birthday staple cupcakes. You’ll want to use these three ingredients.
- Rodelle Vanilla Extract. Their vanilla is so flavorful and incredible that this adds a little extra layer of homemade-ness to the batter.
- Rodelle Almond Extract. This is my secret weapon! You just need a little bit to give it that special flavor where people go “hmm this tastes different and delicious.”
- Rainbow Sprinkles. Obviously you need these. But, make sure you use “jimmies” not “nonpareils” because the latter will just dye the batter and you won’t get the little pockets of color.

Aside from just wanting to make some funfetti cupcakes for you all, I whipped these up to share with my little sister who just started college! It kinda made me feel like Randall in Monsters University when he makes cupcakes to make new friends. #MomLife

Ingredients
Funfetti Cupcakes
- 1 box White Cake Mix plus ingredients according to cake mix
- 1 teaspoon Rodelle Vanilla Extract
- 1/2 teaspoon Rodelle Almond Extract
- 3/4 – 1 cup Rainbow Sprinkles
Buttercream Icing
- 1 cup butter softened
- 3 1/2 – 4 cups powdered sugar
- 2 teaspoons Rodelle Vanilla Extract
- 1-2 Tablespoons heavy cream
- pinch sea salt
- Rainbow Sprinkles for topping
Instructions
Funfetti Cupcakes
- Line your cupcake pan with cupcake liners and preheat oven according to cake mix instructions.
- Follow instructions on cake mix box. Then, add vanilla and almond extract and mix til combined.
- Gently fold in your sprinkles, careful not to overmix so they don't spread their color out.
- Fill your cupcake liners about 2/3 of the way up then place in the oven and bake according to package instructions.
- Remove from oven and let cool in pan for a minute or two then place on a cooling rack to finish cooling. Once completely cool (at least 1 hour), frost your cupcakes and finish with extra sprinkles!
Buttercream Icing
- Using stand mixer and paddle attachment, beat the butter for about 2 minutes until creamy.
- Add in 3 -4 cups of powdered sugar, one cup at a time until blended. Add vanilla and heavy cream running on the lowest speed.
- Scrape sides of the mixer, as needed. Then, increase the speed to high and beat for about 3-5 minutes until fluffy and creamy. Carefull not to mix too long or your icing will break.
