Well, it’s no secret that I love Diet Coke®. But, I just tried another one of their adorably sleek new cans, the Diet Coke® Twisted Mango! I have to say that this one is pretty delicious on its’ own and it’s only $0.79 at my local Kroger. It’s the perfect drink to grab on the go after you pick up all your groceries. Since we believe every day should be Taco Tuesday, we decided to use it to make some scrumptious shredded beef tacos.
I love love love chiles in adobo sauce, I could probably find a way to eat them with everything. But, they can be a bit on the spicier side. In walks Diet Coke Twisted Mango to cool those down and add a super refreshing flavor. Big pro tip here, when using your food processor for this braising liquid be very aware the fill line. Only fill it up to that line and then add the rest of the Diet Coke Twisted Mango to your dutch oven. Speaking from experience here.
I really like this recipe because it’s super comforting and a very direct recipe that you can just leave for a few hours while you go about your business. For example, you could take some time to take this fun little quiz to find your Diet Coke match. Or you could like file your taxes, but this seems more fun.
Seriously, this was so good. I know it’s not super uncommon to make a Coca-Cola pot roast style dish but this really ups the game by adding the Diet Coke Twisted Mango and the chiles. It becomes ridiculously tender and perfect for tacos.
It would be a super fun taste test or dinner party to make these with the Diet Coke Twisted Mango and then a bunch of other delicious recipes with their other flavors: Feisty Cherry, Zesty Blood Orange, Fresh Ginger Lime. Can my next birthday party be a Diet Coke themed dinner party? Yes, please. Plus, their fancy and sleek new cans would be pretty perfect party favors. Just tie a thank you mini card on there and we’d be set.
I’m not going to lie to you, we barely had leftovers of this shredded beef. It was so good, I couldn’t stop eating it. I’m glad we bought an eight pack of the Diet Coke Twisted Mango because I drank one alongside the tacos and felt like I was slipping into paradise. I love this new flavor but am glad that they kept the original Diet Coke as is because that’s always a go to in my household. The only thing that could have made this meal better was a little dollop of sour cream but we were fresh out.
While we didn’t have sour cream, we did make a pretty delicious fresh mango salsa to throw on top. Do you guys know how to properly slice a mango to get the most of it? I think I’ll need to make a video of this because I have the best way to do it. Basically you find the pit with your finger, then slice it vertically, grab a glass pint glass and scoop it out from there. It works perfectly every time.
If you are a big salsa fan, I would maybe make double this recipe because it’s addicting. We added shallots instead of onions and I think it really sweetens it up and balances out the fresh jalapeno. Depending on how you like your salsa, you can puree longer for a thinner salsa or less time for a chunkier salsa. If you like it real chunky, you can skip the food processor and just chop it all up.
If you didn’t want to fully make the shredded beef, you could make a quick cheese quesadilla topped with this mango salsa served alongside Diet Coke Twisted Mango. Maybe turn on your favorite Reality TV show and go to town What a fun afternoon that would be — a mom can dream. Also, if you are a spice lover like we are, you could leave the jalapeno seeds in or even substitute it for a habanero pepper. The options here are pretty endless here.
We have discovered one of our new favorite items for taco night in our house, uncooked flour tortillas. It’s like making homemade tortillas but without the hassle. They are like $3 for 8 of them and are so good. I can’t recommend them enough. There you have it friends, shredded beef tacos braised in Diet Coke Twisted Mango topped with a fresh mango salsa. - 2 lb boneless chuck roast
- 1/2 can chiles in adobo
- 2 cans Diet Coke Twisted Mango
- 3 cloves of garlic
- zest from 1 lime
- juice from 1 lime
- 2 Tablespoons brown sugar
- 2 Tablespoons oil
- salt and pepper
- 1 large mango
- 1 shallot
- 1 jalapeno
- 1 lime, zest and juice
- 1 teaspoon salt
- Bring beef to room temperature and season with salt and pepper while you are prepping your other ingredients.
- Preheat oven to 300 degrees F.
- Prepare braising liquid by adding 1/2 can chiles in adobo, garlic, lime zest and juice, brown sugar and 1/2 can-full can of Diet Coke Twisted Mango, careful not to overfill, to a food processor. Blend until combined.
- Pour braising liquid into a deep bowl and add remaining Diet Coke Twisted Mango. Set aside.
- Heat dutch oven for a few minutes til warm then add oil. Then, add beef and sear all sides, 1-2 minutes per side. Remove beef and set aside on a plate.
- Carefully remove pot from heat and gently add braising liquid while scraping bottom of dutch oven to get all the yummy bits from sticking.
- Gently return beef to dutch oven, cover with lid and place in oven for 3 hours.
- After 3 hours, remove beef to a plate and shred with forks. Once shredded, ladle some braising liquid over the beef for added flavor.
- Assemble tacos with beef and mango salsa and serve alongside Diet Coke Twisted Mango!
- Add all ingredients to food processor and puree until desired consistency.
- Eat on tacos or serve with chips and a Diet Coke Twisted Mango!
