How to Use Leftover Corned Beef in Multiple Ways
Okay, well actually we also have this Corned Beef Pizza with a Guinness BBQ sauce and that’s a really good way to use corned beef leftovers too.
But, we are pretty darn excited to share these dumplings with you. I literally couldn’t stop eating them. You might notice in some of the last pictures that the BBQ sauce is a little messy because Joel and I kept dipping them while taking pictures.

Filling your Dumpling Wrappers with Corned Beef
Okay, so the potatoes might be a little misleading. While these would be delightful with potatoes in them, that was just for show. You know, St. Patty’s Day food … Irish … potatoes. That was my connection.
So, the main tip here is do NOT overfill your dumplings. Seriously, Joel tends to overfill things like this (or these) and they explode.

All you do is add a bit of white cheddar and a small slice or two of the leftover corned beef on one side of the opened dumpling. Then, rim the wrapper with a little bit of water and fold it over to seal it. You can use. fork to lightly crimp the edges so it’s totally sealed.
The Dipping Sauce is the Secret to these Amazing Corned Beef Dumplings
The filling for these dumplings are pretty darn delicious. But, the dipping sauce with them is also magical.
We used our homemade Guinness BBQ Sauce (recipe here!) and it was seriously the perfect pairing. Since the corned beef is pretty salty, you want something tangy, a littleeee sweet that balances it out.
You could also serve with a dijon mustard or even a 1000 island dressing to create a Reuben type situation.
Substitute Spring Roll Wrappers in place of Dumplings for another Amazing use for Corned Beef
Surprise! This recipe can actually be made two ways. Which is probably great because you don’t need too much corned beef to fill them and you probably have a solid amount leftover from your St. Patty’s Day gathering.
You can pick up the dumpling wrappers or spring roll wrappers from your local Asian grocery store for like $2 each. If you are local to Columbus, take a visit to CAM or Saraga.
I think I personally liked the dumplings better but both are delicious options. You could easily enjoy them for dinner, maybe serve with some steamed rice. Or you could just have them for an appetizer to share with a group.
How Does Cooking Spring Rolls Differ from Cooking Dumplings
So when you decide between the corned beef dumplings or the corned beef spring rolls, they do need to be cooked differently.
- Dumplings. Once you fill them, you just cook these easily in a hot pan with oil or butter until they are browned and slightly crispy.
- Spring Rolls. These need to be made in the air fryer (my fav). You brush some oil on the wrapped spring rolls and then cook for 5-7 minutes until browned and crispy.

Incredible Irish Corned Beef Dumplings
Ingredients
- 12 dumpling wrappers
- 8 spring roll wrappers
- 4 slices white cheddar cheese
- 1 cup corned beef thinly sliced
- 1/2 cup green onions chopped
- BBQ sauce for dipping
Instructions
- The ingredient amounts above are for 12 dumplings OR 8 spring rolls. If you want to make BOTH, you will need to double the amount of cheese and corned beef.
- First, you need to slice or rip your cheese into small pieces. Then, you need to slice your corned beef into thin slices so they fit into your dumpling or spring roll wrapper.
- Then, you need to close the dumpling or wrap your spring roll. I recommend googling how to wrap these so you make sure they are rolled tight and closed correctly. Do NOT overfill them. Trust me, less is more here.
- Once they are filled and closed, you want to cook them. The dumplings and the spring rolls are cooked differently.
- For the dumplings, get a medium sized pan and bring it to medium heat with a little bit of oil in it. Then, pan fry the filled dumplings for a few minutes on each side until browned and slightly crispy.
- For the spring rolls, brush them with a little bit of oil on the outside. Then, place in an air fryer for about 5-7 minutes until browned and slightly crispy.
- Serve both with green onions and BBQ sauce for dipping!
