It’s still Cookout Week and we’ve got recipe number three for you! First was our perfect potato salad and second was our amazing duck tacos and now we are bringing you some grilled corn on the cob.

We don’t typically cook with coconut oil so I was really excited to try this out, especially because it’s butter flavor and I’m all about that. We were having a cookout at my dad’s house so I thought trying the oil out on our grilled corn on the cob would be a perfect first way to use it!
We were cooking our corn on the cob in foil on the grill, so we used smothered the oil on it and then wrapped it in foil. Since coconut oil “hardens” at room temperature, you’ll want to warm it up so it’s melted. We just tossed it in the microwave for 30 seconds and then used a pastry brush to cover it and get all that yummy flavor in there!
A word of advice, be careful when you are wrapping the foil back up because the melted oil could spill and no one wants that all over their grill!
We were cooking at my dad’s house and he has a Traeger grill. Do any of you have one? If you don’t, here’s a little info from their website to give you some more details!

If you do have one, you can find the wood pellets on Amazon and at your local Costco! Since we live in an apartment, we don’t get to grill out a lot so it’s always a treat when we get to at my dad’s house!
I love grilling, well I love eating grilled food. That’s the same, right? I actually don’t know if I’ve ever grilled something from beginning to end. I’m usually just on “hey, go turn the chicken” duty.
But, the nice thing about grilling corn on the cob is that after you wrap it in the foil, you toss it on the grill and leave it on there for 20 minutes or so and it’s ready! It’s pretty fool-proof for even the most novice grillers.
Just be careful when you open it up because it will be pretty toasty! It will be deliciously buttery and ready for salt and pepper and/or whatever other seasonings you want to toss on there. Just saying, the “everything” seasoning would be pretty bomb on this.
I really loved using coconut oil on the corn on the cob and it might be my go-to moving forward. We don’t have any dietary restrictions but my stepmom has a few and Barlean’s is certified Organic, vegan, Non-GMO Project Verified and contains no dairy, gluten or soy, no trans fats or hydrogenated fats, and it’s cholesterol free!

- 1/2 cup Barlean's Butter Flavored Coconut Oil
- 6 ears fresh corn, shucked
- salt and pepper
- other seasonings, if desired
- Shuck and clean corn. Lay ears of corn on single pieces of foil.
- Melt coconut oil in microwave for about 30 seconds.
- Using a silicone pastry brush, fully coat the ears on corn and then tightly wrap in foil.
- Place each foil wrapped ear of corn on the grill and cook for 15-20 minutes.
- Carefully remove from foil and season with salt and pepper and any other seasonings you desire!
