- Rotisserie Chicken. We picked up a $5 one from Costco! These are so versatile for so many recipes but we love it for chicken salad. You could also just cook up some chicken breast or thighs too, but this is way easier.
- Green Grapes. Okay, I know a lot of people use red grapes but I think green are superior. They are a little bit more tart which balances so well in this recipe.
- Toasted Pecans. You think this might be the secret ingredient, but it’s not! However, they are an essential ingredient in this recipe and totally elevate your chicken salad.
- Salt + Pepper. This is basically a must in all recipes. Add to your seasoning preference.
- Mayo. Hellman’s or Duke’s only. Preferably Duke’s. It’s the best.

Chicken Salad
Ingredients
- 1 Rotisserie Chicken (about 4-5 cups) cooled + shredded
- 1 cup toasted chopped pecans
- 2 cups green grapes sliced in half
- 1 cup mayo
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 Tablespoons honey
- 6-8 croissants or slices of bread
Instructions
- Preheat oven to 425 degrees F. Place pecans on baking sheet and cook for 10-12 minutes until fragrant.
- While the pecans are cooking, prepare the rest of the chicken salad. Pull the meat from the chilled rotisserie chicken and shred, remove any skin or fat. Place in a mixing bowl.
- Add grapes, mayo, salt, pepper, and honey and mix to combine.
- Once the pecans are toasted, let cool for a minute or two then add to chicken salad mixture. Combine until very well mixed.
- Add a scoop to a croissant or bread and enjoy!
