I’m a Mom of a toddler, so I feel like it’s a requirement to have giant boxes of Cheerios in my house at all times. The only downfall is that O decides to go through phases where she’d rather throw her Cheerios on the ground instead of in her mouth. Toddlers, cute right?
Instead of losing all this cereal to our carpet, I decided to add some marshmallows and white chocolate to make a Cheerios dessert for the whole family.
This recipe is a pretty straightforward twist on the childhood classic Rice Krispies Treats, with a few twists. I used white chocolate because I had some mini chips in my pantry. But, you could also use regular chocolate chips, butterscotch, or even peanut butter chips!
O is still under two, so she wasn’t able to help with all the steps of this recipe. But, if you have a kiddo who is older (at least 7/8) they can totally whip this one up with you!
You have to move fast with these marshmallows and white chocolate though because they will stick to your pot and nobody wants that.
Once you have all your melty goodness ready to go, you can toss your Cheerios right in there and mix, mix, mix. Or you can have your Cheerios is a large bowl and drizzle the white chocolate/marshmallow mixture on top then quickly combine.
Apologies because this part might get a little messy. But, what fun is it to always have a clean kitchen?
Here is where you’ll need some muscle for these no bake Cheerio bars! Just pour your fully combined Cheerios mixture into a parchment lined pan and smoosh down until it’s totally filled up and even.
I would suggest using a buttered spatula or wooden spoon so the mixture doesn’t totally stick to it.
If you want to take this Cheerio recipe to the next level, add some cute little sprinkles. I feel like these are total funfetti looking with the rainbow sprinkles. You could easily add different colored ones for holidays throughout the year too!
After you’ve filled your pan with your treats, toss it in the fridge for at least an hour to let it cool and set. You can totally leave it in there overnight too, whatever your schedule looks like. Then, you just pull them out and slice into your desired size!
This Cheerios dessert is seriously SO easy and requires no actual baking. It’s a little extra fun with the sprinkles and white chocolate but if you are a classic lover, you can leave both out.
