We hail from the Buckeye State and actually the Buckeye city, Columbus, Ohio! Growing up here, we know that a buckeye isn’t just a nut (poisonous BTW) but a peanut butter and chocolate way of life. My friend Erin (The Spiffy Cookie) actually shares peanut butter and chocolate recipes every Saturday during Football Season!
I realized I have ZERO buckeye-centric recipes on the blog and knew that had to change. These peanut butter and chocolate rollups have just three ingredients and take about 20 minutes from beginning to end.
I used creamy peanut butter for these delicious little dessert rollups, but you could totally use crunchy peanut butter for an extra bite of texture. Creamy peanut butter might be easier to smooth out in the crescent rolls though. Speaking of, any brand will work just fine for the rolls! We used some from Aldi but the Pillsbury crescent rolls are my FAVORITE. Plus, my sources tell me that they are *vegan* which makes this whole recipe totally free of animal by-products, if that’s your thing.
Now for what makes these little snacks “buckeye,” the chocolate! I used a dark chocolate bar and just chopped it up but you could probably use chocolate chips too. Make sure not to overfill the chocolate because it will explode into a big ol’ mess and nobody wants that.
Another reminder, don’t overload with chocolate! The nice thing about crescent roll dough is that you can mold it easily to cover up the chocolate and make sure it stays put. Pinch it shut so that it’s all nice and concealed inside before putting it in the oven. Cook according to package instructions and maybe 1 minute longer, just in case. The chocolate will be super melty and HOT so be very careful before digging in.
Serve with powdered sugar on top because it’s pretty and extra sugar is the best. Heads up that the chocolate will solidify after an hour-ish so I’d eat these pretty soon after they cool down. You can definitely warm up in the microwave for 10-15 seconds to re-melt the chocolate but that’s if you even have any leftover.
