Happy Halloween! We hope you’re ready for a spooktacular event as we celebrate Halloween with the first annual #HalloweenTreatsWeek event hosted by Angie from Big Bear’s Wife. This haunting week-long event is filled with fantastic Halloween treats, recipes and some frightfully fun giveaways.

For our very first #HalloweenTreatsWeek event we have 30 talented bloggers that are sharing their favorite Halloween recipes throughout the week! There are going to be over 100 Halloween themed recipes shared during this year’s #HalloweenTreatsWeek and we can’t wait for you to see them all!
I know you all know we LOVE these fun blogger weeks! We get to come up with some awesome new recipes and we get to share all the amazing work from other fellow bloggers. Plus, we also highlight some wonderful brands that you may have never tried before. It’s a win-win all around.
First up, we are making these Halloween “snoballs” for you to try! Do you remember those pink fluffy little morsels of chocolate and marshmallow? I’m sure you do! Well, this is a way easier and (I think) way more delicious version. Plus, if you are looking for something fun to bring to a Halloween party, but don’t want to get too crazy, these totally do the trick.
If you pay attention to some of our recipes over the past month, you’ll find that I’ve been a bit obsessed with Adam’s Extract ClearVan. I’ve literally almost gone through the whole bottle but luckily it’s like $4 so BRB while I order a case. Usually, it’s used to vanilla (cup)cakes but I made an exception for these little chocolate morsels.
Adam’s Extract also sent us some red food coloring and I’m not going to lie to you, I pretty much NEVER use food coloring at home. No specific reason, I just don’t find myself needing it a lot when I bake. Theirs is powerful! I used only a half of a teaspoon for these coconut topping and it was plenty. Plus, I may or may not have stained my new kitchen towels. Whoopsie.
Alright, so really these should be called “super easy snoballs” because I left out some of the more labor intensive steps like other copycat recipes. Instead of doing anything with marshmallow or trying to pipe the cream inside the snoball, I opted for a whipped cream topping! I love making homemade whipped cream because it’s delicious and takes like 5 minutes.
Basically, you just make a batch and then plop some on top of your chocolate cupcakes and voila, looks like a snoball to me!
Lastly, just roll the top around in your red shredded coconut topping and you’ve got yourself a Halloween “snoball” dessert. Our friends over at Wilton sent us these cute toppers so I had to use them for these snoballs.

Halloween “Snoballs”
Ingredients
Chocolate Cupcakes
- 2 cups sugar
- 1 3/4 cup + 2 Tablespoon flour
- 3/4 cup cocoa powder
- 2 teaspoon baking powder
- 1 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2/3 cup canola/vegetable oil
- 1 cup whole milk
- 2 eggs
- 2 teaspoons vanilla extract
- 1 cup hot coffee (or water)
Whipped Cream
- 1 cup heavy whipping cream
- 2 Tablespoons sugar
- 2 teaspoons vanilla extract
Coconut Topping
- 1/2 teaspoon Red Food Coloring
- 1 1/2 cups shredded coconut
Instructions
- Preheat oven to 350F and line muffin tin with cupcake liners, preferably cute Halloween ones.
- In large bowl, whisk together sugar, flour, cocoa powder, baking powder, baking soda, and salt until combined.
- Gently add in canola oil and milk, stirring until fully combined.
- Add eggs, one at a time, whisking until fully combined.
- Stir in vanilla extract, again stirring until fully combined. Batter can be a bit thick, so you can also use your stand or hand mixer here.
- Add hot coffee (or water) and stir until the mixture is evenly combined (it will be a thin batter. Keep stirring until it totally comes together and don’t be concerned that batter will be pretty thin.
- Fill your muffin pan about 2/3 of the way full and bake for 19-23 minutes, or until fully cooked.
- Cool cupcakes completely before topping with whipped cream. Then, roll in red coconut shreds. Top with cute Halloween topper and enjoy!
Whipped Cream
- Add chilled heavy cream, sugar, and vanilla to a cold stand mixer bowl. Whisk on medium high until fluffy, about 5-6 minutes.
Coconut Topping
- Place coconut shreds in large mouth bowl then add food coloring and whisk until completely combined.
