I love potato skins. I mean, what isn’t to love? Crispy potatoes topped with cheese and bacon. YUM.
But, we decided to switch it up and use frozen hash browns as our base for these potato skins. Dare I say that I like this better than the original!
The frozen hash browns get super crispy. We cooked ours in the air fryer, but you could also prep in the oven too.
How to make hash browns loaded.
I also love this version of potato skins because the hash browns are flat which make it easier for the toppings to stay on top. Speaking of toppings, here are the best options to make ’em loaded.
- Cheddar Cheese. This is the classic option and oh so delicious. You could swap for mozzarella, but I wouldn’t stray too far from those two.
- Bacon. We used Saddleberk Bacon from a local farm here in Ohio. You can pick it up at Kroger.
- Green Onions. I love green onions and feel like that’s a weird thing to love but I feel like potato skins aren’t complete without them.
- Sour Cream. Joel doesn’t like sour cream so we left it off these potato skins but you could add a dollop for extra creaminess.
- Hot Sauce. I drizzled sriracha allll over these babies. I love the sweet heat from it, perfect for these loaded hash browns.
Perfect for your watch party.
While this isn’t a crock pot dish that can sit all day at your football party, it’s still a worthy addition.
You can prep these when your pals arrive to watch the game and eat them immediately or you can keep warm on a baking sheet covered in foil.
I mean, once you make one – you won’t be able to stop eating them. They are the perfect amount of crispy and salty and flavorful and delicious.
Other topping ideas.
Okay, if you wanted to get a little crazy and make a variation of the classic loaded potato skin, we thought of a few other ideas.
- Buffalo Chicken. I love everything buffalo chicken, so I’m all about this. Use chopped chicken, mozzarella cheese, a drizzle of buffalo sauce and top with green onions.
- BBQ Chicken + Bacon. Use mozzarella cheese, chopped chicken and bacon then drizzle with your favorite BBQ sauce and green onions.. always.
- Poutine Style. Okay, I gotta do this one. Use cheese curds and drizzle with gravy. YUM.

Our favorite other Game Day snacks.
I love football for the snacks. I mean, I actually also like football (Go Bucks) too but I really love the snacks. Here are some of our favorite meals to make with your loaded hash brown potato skins.
- Soft Pretzel Bites. These are amazing and addicting. Serve with cheese dip or yellow mustard.
- Naan Pizza Dippers. Handheld snacks are the best snacks. You can make these for a crowd and everyone will be pleased.
- Quick Brined Chicken Thighs. While these aren’t totally “snack” items, they are perfect for a football game. Smoosh in between a bun and voila, a yummy sandwich.
Loaded Hash Brown Potato Skins
Ingredients
- 6 frozen hash browns
- 1 cup cheddar cheese shredded
- 1/2 cup cooked bacon chopped
- 1/4 cup green onions chopped
- sour cream optional
- hot sauce optional
Instructions
- Prepare your hash browns according to the package or in the air fryer for roughly 8-10 minutes. Careful not to let them touch because they will stick together.
- Place cooked hashbrowns on a lined baking sheet (silpat, parchment, or foil are all fine but grease the foil so they don't stick). Sprinkle the shredded cheese and bacon on top of the cooked hashbrowns.
- Then, place in oven and broil for roughly a minute – until the cheese is melted. Set a timer! You don't want to burn these tasty little hash browns.
- Remove from oven and top with green onions. If desired, add sour cream and hot sauce or sriracha!
