- Rainbow Carrots. Okay, but these are so pretty. Technically, you can use regular orange carrots but the rainbow ones are gorgeous!
- Honey. We used a mild, basic honey here so it paired well with the harissa. If you omit that spice, you could do a wildflower honey for a little different taste.
- Dried Harissa Seasoning. This smokey-spicy blend is usually in paste form, but you can easily find it in powder form at places like Whole Foods or World Market. It adds a really delicious flavor to these glazed carrots.
- Butter. You must have butter in everything, obviously. But, also the butter helps to make the glaze a little thinner and not so sticky.
How to make these tasty glazed carrots.
This side dish is so simple, it needs to make a place on your plate. There are just a few steps until you get deliciously smokey, sweet, and addicting honey glazed carrots. Here’s a breakdown of the simple steps.
- Boil the carrots. This takes just a few minutes, about 3-5 depending on the size of your carrots. Once they are tender enough to pierce with a fork, you’re all set.
- Make the glaze. Use a nonstick pan (like this one) to melt the butter with the honey and harissa to make the glaze.
- Toss the carrots in the glaze. Easy peasy, just toss your cooked carrots in the yummy homemade glaze and push around until they are totally coated.
That’s it! So easy, so good. You can serve immediately or leave in the pan until you’re ready to enjoy – just put the temperature on low. Plus, you can use the tops of the carrots as a garnish which is pretty cute and those greens are actually super nutritious!

Harrisa + Honey Glazed Carrots
Ingredients
- 1 bunch rainbow carrots
- 2 Tablespoons butter
- 2 Tablespoons honey
- 2 teaspoons harissa seasoning
Instructions
- Boil rainbow carrots in a large pot of water. You can peel your carrots, if desired, but we prefer to leave them a little rustic. Boil for 3-5 minutes, depending on the size. They should be tender enough to poke with a fork.
- Add butter to a nonstick pan and start to melt. Then, add honey and harissa. Whisk with a rubber whisk (metal will ruin your pan) until totally combined.
- Over low-medium heat, add the cook carrots. Toss and continue to coat for about 5 minutes until fully coated.
- Place glazed carrots on a serving platter then drizzle any remaining glaze in the pan over the carrots. Top with chopped carrot top greens, if desired.
