Today we are sharing the second recipe for #HalloweenTreatsWeek, these adorable White Chocolate Ghost Cupcakes. This fun blogger week is super exciting for us because it forced us to focus a little extra on decorating! Luckily, our friends over at Wilton and TreatStreetUSA sent us some awesome goodies to help our cupcakes look extra adorable.
If you recall, we got 40 POUNDS of sugar from our friends over at Dixie Crystals for Summer Treat Week. We’ve been able to use it for so many recipes over the past few months so of course it was going to make an appearance in these cupcakes. This cupcake recipe is a staple, it’s super delicious and actually pretty quick to make. I used it for this recipe too!
While I love using my stand mixer, it’s wonderful when I have a recipe that just requires a handy dandy whisk and some elbow grease. This is a pretty basic vanilla cupcake recipe so I was super excited when we got this ClearVan from Adams Extract! “ClearVan® is a high quality, double strength, clear vanilla extract that won’t bake or freeze out.” The team over at Milk Bar uses it for some of their awesome recipes!
If you don’t have the MilkBar Cookbook, buy it immediately. It’s so fun and I actually made the cornflake cookies for my interview for my current job!
While this is a super easy recipe, you want to make sure not to over-mix the batter! Once it’s perfectly mixed, use your cookie scoop to dollop right into your spider web cupcake liner. Fill it up about 2/3 of the way full so it doesn’t cook over the edge in the oven.
Alrighty, now that your vanilla cupcakes are cooling, you can whip up your white chocolate icing! This lovely icing is a blend of cream cheese, buttercream, and melted white chocolate and it’s pretty darn delicious. Just make sure the white chocolate is fairly cool so that your icing doesn’t melt or get weird and smooshy.
Make sure it’s nice and fluffy so you can pipe it easily on top of your cupcakes. I have this Wilton piping kit, and it’s pretty simple to use! I’m not super amazing at decorating, so if you are a beginner, it’s a great place to start.
If you don’t want to pipe it, you can easily just slather some icing on there and make it rustic looking. I think this little swirl is super cute because the ghost candy looks like it’s floating. Our friends over at Wilton sent us these cute little candies which are the PERFECT topping for these vanilla cupcakes with white chocolate icing.

White Chocolate Ghost Cupcakes
Ingredients
Vanilla Cupcakes
- 1 2/3 cup all-purpose flour
- 1 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup melted butter
- 1 egg
- 1/4 cup sour cream
- 3/4 cup whole milk
- 2 teaspoons vanilla extract
- 12 Ghost Candies
White Chocolate Cream Cheese Icing
- 14 Tablespoons cold butter cut into pieces
- 1 3/4 cup powdered sugar sifted
- 7 oz white chocolate chips melted and cooled
- 1/8 teaspoon sea salt
- 1 teaspoons vanilla extract
- 8 oz cream cheese cold
Instructions
Vanilla Cupcakes
- Preheat oven to 350 degrees F. Line cupcake pan with 12 liners, set aside.
- Whisk the flour, baking powder, baking soda, and salt in a bowl and set aside.
- In a microwave-safe bowl, melt your butter. Remove from microwave and whisk in sugar until completely combined with no lumps.
- Add to a large bowl and combine with egg, sour cream, milk, and vanilla until completely combined.
- Gently add in the flour and whisk until combined, careful not to over mix.
- Using a cookie scoop, add batter to cupcake liners evenly across all 12. Bake in the oven for 18-20 minutes, rotating the pan about halfway through cooking.
- Remove from oven and let cool completely. When completely cool, frost the cupcake with white chocolate icing and then top with ghost candy. Enjoy!
White Chocolate Cream Cheese Icing
- Add butter and sea salt to stand mixer and beat until fluffy, 3-5 minutes.
- Gently add powdered sugar and beat until creamy, about 5 minutes. Scrape the sides before adding other ingredients.
- Add melted and cool white chocolate, vanilla extract, and cream cheese. Beat for 3-5 minutes or until fluffy and completely combined.
